The good ones unfortunately are quite expensive these days e.g. Maotai, Wuliangye etc.
I’d say good but still affordable would be Fenjiu and Luzhou Laojiao.
My favourite is unfortunately the paint thinner they sell as Erguotou, I can’t get enough of the sorghum fragrance but to the uninitiated it just tastes like burning. It is the cheapest one but you can also get more mellow aged versions depending on availability in your region.

That is absolutely not my department. I tried baijiu exactly once and never will again. It is up there with akvavit in the category of “Drinks I believe were made as pranks on the unprepared”

Plain soju is way too harsh imo, the fruity ones are far superior. That said I prefer makgeolli because it’s a great summer drink to end the day with
IMO soju tastes like someone put some of that artificial coffee sweetener in (A slightly lighter) vodka to me. My possibly controversial take is that it would be a good base for cocktails that you would otherwise use vodka for, but I am not paying the premium for imported Korean booze to do so.
