    We joke, but from what I can tell based on what vegan yt chefs say, there are people who never saute their veggies in oil before simmering them in the soup. My guess is “water based cooking” doesn’t use oil. Also just looked it up and it seems like they avoid “dry cooking” (baking) or anything that browns food as a way to avoid carcinogens lenin-dont-laugh

      Its the way people on this site can tell me about the nuances of “water based cooking” but redditors only say the same 6 things (and they’re all evil) that tells me how deeply astroturfed that website is

      Ok but many flavor compounds are fat soluble, and browning your food makes it taste better.

      I’d rather die a couple years sooner and eat delicious food, than live forever being an asetic weirdo who’s never tasted flavor before
