Fun fact: NixOS does have a USE-like system in package overrides but they’re not standardized nor is there global package override system.
I also ran into the KDE plasma profile not having KDE plasma. I get that profiles only serve to be a common base for whatever they’re meant for (with compilers, etc configurations, base packages, etc) but a heads up would have been nice.
How much did you have to compile yourself since I see you made some use flag changes?
I don’t know how to check the exacts, but I don’t feel like it’s been too bad. The plasma-meta changes are luckily just whether it should pull in extra packages, so getting rid of it doesn’t require any compiling.

I was actually pleasantly surprised at how quickly some things compiled. I also re-emerged systemd for my homeserver since I wanted to rip out polkit and add in cryptsetup for LUKS and the recomp was over and out.
One thing thats going to suck is that GCC with JIT support isn’t in binhost so Emacs JIT isn’t available by default. I’d have to stick to byte compiled packages anyway since that’s how gentoo packages emacs stuff anyway.
On the flip side it’s really nice to have the newest version of Emacs at my fingertips rather than having to search for a package repo that has it or figuring out how to compile it myself.
