Leftover bits from the sandwiches the other day plus some other things. Most notably some smoked sharp cheddar and smoked mozzarella. I smoked the moz in 2024 and the sharp cheddar in December.

Cost per person? No idea. But way less than a restaurant would charge.

      When temps drop into the 50s I hear two voices in my head. One tells me to grab yarn and start knitting. The other tells me to buy cheese and cold smoke it.

      Most grocery stores will carry a mildly smoked apple wood smoked cheddar that costs 2 to 3 times what normal cheddar does. Or for about $10 in hardware and 20¢ in pellets you can smoke a few pounds at a time. Vacuum seal it and it is refrigerator stable for years. Now you can do all the cheeses. It’s amazing stuff.
